A Jewish Perspective on Vegan Cheese: Thinking about it, making it, tasting it

The Torah states that in the beginning G-d gave Adam “every seed-bearing plant … and every tree that has seed-bearing fruit for food” (Genesis 1:29) The great commentator Rashi deduced from this that all humans originally ate only plants. Other Jewish scholars believe that we will all return to veganism in the Messianic Age. I will briefly discuss these ideas and then focus on how to make vegan “cheese”. I will show participants how to prepare vegan halloumi, share some recipes, and bring some “cheeses” for tasting.
